Natura of Canada Greenspring or All Latex Mattress.

and their all latex Bourdolay Plush mattress, that you sometimes recommend.
My husband and I are in our mid 30s. We are average in size, and have no physical ailments...yet🙂.

Hi Gina,
Both are excellent choices. You can't go wrong with either.
An all latex mattress is extremely comfortable and supportive for those who are younger, fit and ailment free.
It remains like new for many years.
The advantage of the pocketed coils of the Greenspring, is to provide the pushback support that a damaged back needs.
A damaged spine is usually a matter of wear and tear that comes with age.
The discs between the vertebrae wear, resulting bulging, then herniated discs.
That and DDD, degenerative disc disease, all require the pushback support against the spine that an all foam mattress does not provide....not even latex, which is the best, most resilient of all the foams.

I do have one word of caution that was not brought up in your question.
If either of you have a desk job, where you are sitting for many hours a day, this will cause your discs to wear faster.
Preventative measures include walking and stretching exercises.
Also, there's a product on the market that raises your desk, allowing you to stand more. 
Vari-Desk is the brand that leaps to mind.
