Today's mattresses are too hot to sleep on. Whats the best style mattress to avoid being hot?
Plush is needed, does latex vs regular have an advantage? (I know from other posts memory foam isn't a good idea.)

Memory foam is the main source of sleeping hot. The 'so called' cooling gel only works for a few hours, then the mattress heats up in the middle of the night.
A lesser know offender is the flame retardant backing to the fabric, which...oddly enough, seems to only affect females in their menopause years.
The reason for this is unknown, but I'm guessing it's a chemical reaction.
But yes, latex is your solution. If buying new, an all latex mattress is now and for the past 100 years, been the best you can buy for support, comfort and longevity. And, it sleeps cool.
If you go with the Natura brand, you will also avoid the flame retardant the is heating up mature women.
If your mattress is, otherwise, fine and in good shape, then all you need is a latex mattress topper to insulate yourself from the memory foam and other materials in the mattress.
