Hi Anna,

The core of the Nutrition is made of Natural Talalay latex, where the core of the EverEden is made of 100% All Natural Dunlop latex. 

("Natural" is an industry euphemism for "Blended Latex"...30% Natural and 70% Synthetic Latex)

(100% All Natural is just that...all natural with no synthetics...just pure latex)

The difference in the two processes is a couple of extra steps in the Talalay process...one, is a freezing step that suspends to particles. 

While the particles during the Dunlop process settle.

The end result is that the Talalay latex is less dense and more supple.

I have an EverEden 8" at home in my guest room. My guests love it.

I opted for the EverEden with the Dunlop core because the Dunlop is more dense...firmer support for the very large people in my family who use it.

Body weight is an issue in making this choice. If you are of average weight or even above average, the Nutrition provides plenty of support and is more comfortable than the 8" EverEden.

If you carry more than above average body weight, the firmer Dunlop core will serve you better in the long run.
