You missed THEE most important difference between the two mattresses: one you can flip, one you can't.
Several decades ago, "bean counters" took over the mattress industry; they knew nothing about building mattresses, but they knew how to offer a "new" sales pitch about "more advanced" mattresses that you no longer need to flip.
Basically, they did away with half of the materials required to build a double-sided mattress, did very little to incorporate "new technology" in the one side you'll sleep on, changed up the exterior materials, built a flashy new ad campaign, and promptly raised prices across the board. It's very much like most manufacturers these days when they reduce the quantity of product by a few ounces in their container, but keep the price the same...or put a flashy banner on the front "new look, same great product!", but you often get less, and sometimes pay more. I'll never own another one-sided mattress. I just purchased a Shifman Rembrandt, pricey but worth every penny. The hassle of buying a new mattress every 3 or 4 years is senseless.

I haven't MISSED anything. Many of my blog posts warn about the over-all reduction in quality by the name brands.
You, on the other hand, are lacking in history...since yours goes back less than 20 years.
Let's go back further, to when all mattresses were made like your Shifman mattress, upholstered with cotton batting....back to the 1960's and beyond.
In the late 60's, polyurethane foam was invented and almost all of the brands switched from using cotton batting to poly foam, by the mid 1970's.
The poly foam was a lot more comfortable and plenty durable. And, there was a side benefit that was unexpected.
Dust Mites.
Poly foam created a hostile environment for dust mite.
Previously, the cotton batting...like the cotton in your Shifman...was a welcoming environment. Dust mites would get into the mattress, where they would live and breed.
The same thing will happen with yours. And, you paid a premium price for the privileged.
Sleep tight, Joe, and don't let the bed bugs bite.
