Recommendations to soften a too firm Stearns & Foster, or for a new mattress.

Dear Pete,
I have, for the most part, been sleeping on a Posturepedic Gentle Tide Firm with box spring since 2008 with a 1 inch down topper  I LOVE THIS MATTRESS.
In the fall of 2014 I tried a Beautyrest Recharge Catskills II Plush Pillow top on a platform bed.  I hated it.  It was too soft and made my low back ache.
In the spring of 2015 I tried a Stearns and Foster Estate Walnut Grove Ultra Firm on a platform.  I then bought a Sealy 9" Box Spring for it.  Both were way too hard.  
I initially tried an Organic latex mattress topper. Certified organic. Medium firmness 2 inch thick. King size.
I added a 2 inch down topper, but still too firm.
Also my wife did not really like the latex but maybe different latex set up would be better.
We recently stayed at a Marriott Renaissance and slept on a Simmons Hospitality Beautyrest Recharge Hype Park - Plush on a platform.  WE REALLY LIKED IT.
Given this what would you recommend.

Hi John,
The problems you've encountered are due to the choices you made.
1) The latex topper, you bought, has a medium feel. It isn't soft.
The one we recommend is soft...The Ever-Eden All Natural 2" Soft Talalay latex.

2) Simmons Beautyrest uses a pocketed coil...as opposed to your old Sealy, where the coils were interconnected.

Plush and pillowtop models are the source of all their bad reviews. If you look at reviews on line about Simmons Beautyrest, they're horrible.

The reason why they are so bad, is because the plush and pillowtop models are, initially, the most comfortable and sell the best.
The thin wire used in the plush models and the memory foam in the pillowtops are why these mattresses don't hold up well.

When we recommend a Beautyrest, we recommend a luxury firm model, which has a heavier gauge wire...and we recommend a 2" Soft Latex topper to go with it.
The topper does a number of things...1) softens the surface, providing long lasting surface comfort. 2) Insulates you from the memory foam in the mattress. 3) Absorbs so much of your body weight that it causes the mattress to last a lot longer than it would without it.
It's the individually pocketed coils that make a Beautyrest so comfortable. They move independently from one another...contouring to your natural shape of your spine and maintaining proper spinal alignment.

The purchase of a plush or plush pillowtop Beautyrest, is a waste of money.
