Hi Robert,
After Tempurpedic bought Sealy, in 2013, they loaded almost all of their mattresses with memory foam....almost.
There are still a few models at the low end of the line that remain untouched by memory foam....and are referred to as Classic Posturepedics.
And while there isn't an ultra plush to be found, there is a plush model available.
A friend, and an old boss from many years ago...has that available.

The mattress my wife and I have, is from Natura...a Canadian company.
Their Greenspring line uses a pocketed coil unit that is superior to the unit that Simmons makes...twice tempered steel and a higher coil count.
Other than those spec changes, it's the same...a barrel shaped coil, pre-compressed into a pocket with each coil moving independent from the next.
This design maintains the natural alignment of the spine...and, greatly reduces motion transfer, so if there is more than one person in the bed, you won't feel each other move.
The upholstery used in the Natura Greenspring is latex, primarily, with a little soy based poly foam.
There is no memory foam and it's chemical free. Even the flame retardant is a thin layer of wool.
The Liberty Ultra Plush model is what we sleep on, and it provides excellent support and comfort...without being too soft.
