The thing that worries me is the gel infused quilting foam.
My guess is that it's memory foam, since the only foam that need to be gel infused is memory foam.
But, it doesn't say for sure.
Latex is excellent stuff and at its best use when on top....since it does the best job of resisting body impressions.
If I had to choose for you, I'd go with the Simmons Beautyrest World Class in luxury firm and add a 3" soft latex topper to it.
3" of soft latex is super comfy and where it needs to be to get the most out of it...on top.
You can try any Simmons Beautyrest luxury firm pillowtop, to get an idea of how the mattress will feel...although, the latex topper is far better than the foams in the pillowtop.

In king, which I assume you have...as that hump in the middle is common with king size, the set runs $1979.00 and the latex topper is $549.99.
