You gave me some advice below regarding memory foam and Beautyrest mattresses last summer, but unfortunately we didn't take it.
My wife is a side-sleeper so we purchased a Doctor's Choice-Plush a few months ago It was rated by Consumer Reports as the best mattress for side-sleeping that didn't have memory foam.
After sleeping on it, my wife's lumbar spine problem only got worse. It doesn't feel plush and she developed pressure points everywhere. After only a few hours in the bed, she is in agony.
After she's up for awhile and walking around the pain dissipates almost entirely.
The store we got it from told us that is that their plush is the same as their firm except for a looser thread pattern on the top.
The coils aren't individually pocketed but are described as follows:
Coil Density: 750* Foam Encased
Pressure Response Zoned Coils14.5 Gauge Twice Tempered Steel
We're pretty much convinced that my wife's lumbar spine issue needs individually pocketed coils so we tested the Beautyrest World Class Corinth Luxury Firm which is exactly the same mattress as your Santorini Luxury Firm (see specs below).
She also tested their Corinth Plush. It also has a looser thread pattern like the Doctor's Choice plush, but in addition, the coils are 15.5 gauge vs. 14.0 gauge for the Luxury Firm. She really liked the plush.
The Luxury Firm felt really hard.
Here's our concern: The Beautyrest Luxury firm is even stiffer than the Doctor's choice (14 vs. 14.5 gauge steel) and my wife is only 125 lbs (I'm 165 lbs.).
We wonder if even a 3" latex topper will soften the Luxury Firm bed enough.
I'm thinking her weight might not even compress the springs enough to support her back properly.
For these reasons, we're leaning toward the plush with the option of adding the latex topper to it as well.

If you look on line at the reviews for Simmons Beautyrest, you'll notice that they are horrible.
The reason for this, is the way they are sold and bought.
Store salespeople are poorly trained when it comes to their products. The training they get is in how to make the sale...any sale...regardless of whether it's a good choice for the consumer.
To this end, store showrooms are filled with very comfy mattresses that are designed to sell, but not last.
Plush and Pillowtop models abound for this purpose.
A salesman will push the idea of comfort above all else. A consumer is easily led to indulging their sense of comfort...and quite frequently, they will indulge their sense of luxury....to the exclusion of all else.
The reviews about Simmons are as bad as they are because of this.
If you look at the Beautyrests offered on our website, you'll notice that they do not include plush and pillowtop models.
They are as available to me, the same as in any store. However, I won't take an order for one.
We do our best to avoid problem mattresses. I'm quite sure that my customers would prefer to avoid the aggravation of a warranty claim, and I, sure as hell, don't need the extra work that goes along with that.
The thin gauge wire of the plush models and the memory/poly filled pillowtops lose their shape quickly....within only months, not years.
My original recommendation is one that has been sold countless times over the past 10 years...and with zero complaints to show for it.
Perhaps if I charged a fee for my advice, it may be perceived as being worth more.

The soft talalay latex topper provides long lasting surface comfort.
