Hi James,
Let's put this into some sort of perspective.
You never heard much about this, years ago. It wasn't a concern then.
All this talk about chemical off gassing is purely about the memory foam that has been used over the past 17 years...and mostly over the past 10 years, when everyone got in on the act...so to speak.
It started with Tempurpedic, 19 years ago. As the mass media hype created the demand, and they began to take more and more of the "market share", name brand companies began making memory foam mattresses to compete.
As the artificially created demand grew, memory foam found its way into more and more coiled mattresses.
The other foams used, are polyurethane and latex.
Latex is all natural and ammonia is the only chemical compound used in making it.
Polyurethane is a petro-chemical based product that has been used relatively safely since the early 1970s. I say, "relatively", because cases of people reacting negatively to to are very rare. Polyurethane is used everywhere in your home...from carpet padding to every seat cushion.
The only time there is a problem with polyurethane, is during manufacturing, if it isn't cured properly. A large roll is affected, from which a number of mattresses will have a bad smell that doesn't go away quickly. These incidents are uncommon and can affect every manufacturer, as they all buy their foams for the same place.
Mattresses made in the US must be flame retardant, as of January 2007. To accomplish this, you can treat the fabric with boric acid, (the same chemical used to kill roaches, or as most manufacturers do, you can use a non-chemical flame retardant backing to the fabric. There is simply no way around it.
The only reaction I've seen occur, is the feeling of warmth from those who are menopausal....which seems to go away after a couple of weeks.
The danger of that backing is when it's exposed to flames. At which time, you have more imprtant things to worry about.
The individually wrapped coils are pocketed in a product called, "Duon". (spell check on that). It's been used for nearly 40 years with no negative side effects.
Your problem is memory foam. Avoid mattresses made with memory foam and you'll have nothing to be concerned about.
Memory foam is, initially, very comfortable...which is why is sells easily and why it's used so much. But, it doesn't last long and there are a myriad of negative physical side effects...mostly respiratory in nature.
Eliminate the problem all together and get yourself an all natural, organic, chemical free latex mattress. Not only are they safe, but they will out last and outperform anything that Tempurpedic makes. Here is the link to those.
Delivery to Chi-Town is free...and there's no sales tax charged.
(Beautiful City, btw.)
