Which Mattress with a 2" Talalay Latex Topper?

I say that sore & achy,
My husband and I are wanting to move up from a queen to a king bed. I have seen that you absolutely recommend the Pure Simple latex bed. We are not on a budget but hope not to break bank either. We are not opposed to a regular or latex bed, cannot have an ultra firm bed, saw that pillow tops are crap as are memory foam, and plush have a short coil life.
What brand, bed, etc do you recommend? 
And don't worry, we will be buying the 2" latex bed pad once a bed as been chosen. Without living in the Delaware area how do I choose soft vs medium?
