One Sided Pillow Top Mattress with Memory Foam

We are both 67 years old. He is 5'11" and 177 lbs. I am 5'5" and 125 lbs. My husband sleeps on his side and stomach. I sleep on my side and back. We are noticing lower back pain in morning and also pressure points. We bought a one sided pillow top with memory foam which has channels in it. So tried a blue gel topper it still shows the same channels. That was over $100 so I am wondering if I should take it back or is it channeled because of the mattress under it?
We need a new mattress for our summer location so only used 4 months. I would like to find a firmer mattress but need some softness for pressure points. Should we buy a mattress without a pillow top and just buy a separate topper or use the blue gel topper?
It seems that Hilton has comfortable mattresses. Would a hotel mattress be a good choice or do you have other suggestions? We prefer to stay at a maximum of approximately $1200 for the summer home mattress. We want a 9 inch base. I am assuming we should look for single coil type mattress but really don't know for sure. It is so confusing due to numerous types and components.
