Have two-sided queen mattress with some "gullies" in it, but cannot afford to replace it now (Simmons Beautyrest exquisite luxury mattress). Am thinking about adding a latex topper to extend its life. It has been very comfortable - never was too firm. But as we've aged, it's become a little bit uncomfortable; perhaps the springs are closer to the surface than they used to be. We are in our 60, each about 150 lbs. Input appreciated. Thank you.

Quite right. After all this time, the padding has compressed. You are, indeed, closer to the coils and the padding under you is firmer.
A latex topper will restore the surface comfort. It will not, however, turn your mattress into a new one. That is to say, if you don't mind the gullies, which will remain, a latex topper will work for you. The question becomes, "which one?". As I read your letter, I was thinking that the Dunlop would be best, considering the need for support. However, after reading your body weights, I thought the soft Talalay might be better, as it provides a greater degree of comfort.
Both types are comfortable and supportive...more support than comfort for the Dunlop and more comfort than support for the soft Talalay.
The question, then is, "how you want the mattress to feel"?.
Being older with a 150 pound female, who would likely need some extra softness at the hip, and for an older, slender man who exerts little pressure, I'm supposing that the extra comfort would be welcome. 2 inches is the most popular choice, with 1.5" often not being enough and the 3" just as often, being too much. If I had to choose for you, it would be the 2" soft Talalay.
However, if the hip is ok and assuming you like a firmer feel, the 2" Dunlop would be the logical choice.
