Easy. It's all about what's real.
Take maple syrup, for instance. Real maple syrup is the sap from the maple tree. Many hours are spent in cooking it until it becomes the right consistency. Ever notice the difference in price between pure maple syrup and Log Cabin? It's the difference between real and chemicals.
So it is with foams used in the mattress industry. Latex is rubber. It starts out as the sap from the rubber tree. It's whipped into a liquid foam and poured into a mold. It's heated. It's frozen. It's thoroughly washed. The process is long and labor intensive. It's expensive for much the same reason pure maple syrup is expensive. And like pure maple syrup, worth every penny. It's the real deal.
That's why it's expensive. For further justification, consider that it is the only material the will provide long lasting support and comfort to a person weighing 320 pounds. Everything else will fail within months. Nothing else makes sense.
