We certainly agree on no memory foam! A couple of questions:
I'm a large man, but with my wife being petite and not very heavy, would this mattress be comfortable enough for her?
She has been counting on something not as hard as what we have now and some relief from bouncing when I turn over.
Would a simple, luxury firm, individually pocketed coil mattress work for us, with your soft latex topper?
And by the way - she does have issues with a stiff neck, but we think can solve that with a good pillow.

Yes. The difference in your sizes means that your requirements are different.
Going with a compromise on your part, to make your wife comfy, does bring you to an individually pocketed coil.
However, they are not all alike. There are many individually pocketed coil mattresses on the market.
In only one major brand, do the coils actually move independently from one another.
This would be the Simmons Beautyrest.
The strongest of the Simmons models is their "Black" Series, which use a triple strand wire in half of the coils, (a single wire in the other half).
My wife and I are heavy, with both of us in the 220 some pound range....and have an older Black model with a 2" soft Talalay latex topper.
