Lastly, we have purchased a platform bed for him. It comes with slats.
We also have purchased a bunkie board as it says that in the highest setting you need this instead of a regular box spring.
The bed (frame) arrives this week, and we would probably prefer to use a box spring set up but would it be ok to use a bunkie board long term?
Does it diminish support or life of mattress long term?

A mattress is a pressure sensitive product, meaning that the degree to which it wears depends on the weight you place upon it.
little children weigh very little and most don't put on any real weight until they reach puberty.
If 10 or so years, is all you want from this purchase, then the reasonably priced Simmons Beautyrest Great Lakes Cove in Luxury Firm, will do that job.

We have a 5 year old grandson, who has had an all latex mattress since moving from his crib.
However, an all latex mattress is a long term purchase. It will last him through his college years and on to his first apartment.
And, as I have heard on several occasions, he'll be sorry he no longer has it, after buying his first mattress to replace it.
If you are going with latex, I recommend the EverEden Pure, All Natural, Allergen Free Vytex Dunlop Latex.
I suggest starting with the 6" Model in Medium....then add a soft Latex Topper to it, in about 10 years, when he starts to fill out.

Either way, delivery is free and there's no sales tax.
Go to Bed Bath & Beyond, or a similar retailer, and buy him a thin pillow.
You can think about investing in a latex pillow when he's fully grown.
The Bunkie Board is an excellent choice to start.
Once he grows, and should he be too tall for that, then you can think about replacing it with a standard foundation.
