The water bed mattress, you have, is adding to his back problems. Displacement does not provide proper spinal support.
The Desiree in luxury firm is the softest mattress you should consider.
For a large man, exceeding 200 lbs., then the Simmons Beautyrest Black is the appropriate choice, especially with disc problems.
You can further soften the surface with a 2" latex topper.
Latex is far more resilient than the foams that are used in the mattresses. 
It will soften the surface without sacrificing the underlying firm support the mattress provides for his back problems.
