Hi Abby,
In the New Recharge line, Simmons upgraded all their paddings, including the memory foam to their NxG memory foam. NxG stands for Next Generation and is quite a bit different from the regular memory foam used in the older line. 
It's hard to say if it's 100% safe, but there are no reports of people getting sick over the last few years its been in use in their high end models. It is far less temperature sensitive and holds up well. 
The objections I have to regular memory foam, I don't have with the NxG. 
The mattress my wife and I had for years, was a Simmons Black model with NxG foam in it. Our experience with it is positive. 
However, if you would like to avoid memory foam altogether, and would like to opt for a mattress using all natural latex, The Wolf Adrian & Adara models are an excellent choice for children.
I like the Adara for girls and the Adrian for boys.
