You shouldn't have too much trouble with this. You both like it on the firm side, so reaching a compromise shouldn't be difficult for you. You are both trim and in good health.
The only problem I see is in perception, based on coming off a 20 year mattress. Like many things today mattress are just not made as well as they were back then. The difference is dramatic, so prepare yourselves for that.
At this stage in life, you may enjoy the contouring support of and individually pocketed coil system. The best of these is the Simmons Beautyrest, with the Black line being the best they make...where you will find a variety of comfort levels from which to choose. My wife and I have one of these. Ours is a plush/firm Ansleigh model, which provides a more comfortable sleeping surface. They also have luxury firm and extra firm to suit any taste in comfort.

Since you are used to using a topper, I recommend continuing with that, as my wife and I have. A 2" latex topper will add additional comfort and also extend the life of the mattress.
