Hi Christina,
I have that same Ever-Eden 6" Vytex Dunlop Latex mattress for our grandson.
Latex is extremely resilient and the Dunlop latex is more dense than the Talalay.
If going with the 6", I suggest the choice of "soft" for maximum comfort.
We have a 3" soft Dunlop topper that we tried at home. It's comfortable, but in no way is it too soft.
The fire retardant is like most mattresses...a kevlar type of material that only off gasses when exposed to flames.
It's perfectly safe until then. But at that point, your problems are far greater than that.
The only flame retardant that is toxic and worth worrying about, is when the fabric is treated with Boric Acid...the stuff used to kill roaches.
That's not the case here.

As a side note, this is Vytex Dunlop.
The regular latex foam process removes about 90% of the allergen, (the protein that is in the sap from the rubber tree).
This makes all latex foams, hypoallergenic.
The Vytex process removes much more of the allegen, making it virtually, allergen free.
