Mimicking the feel of a Simmons Beautyrest Black Pillowtop Mattress using a latex topper instead of the pillowtop.

Hi Pete,
I've been reading several posts on your blog and find it to be very informative!
I wanted to ask your personal and professional opinion about trying to recreate and sustain the feeling of a luxury firm pillowtop mattress. 
In particular, I have been "test sleeping" on a few mattresses in the Beautyrest Black line. I have found that I really enjoy the comfort of the Luxury firm as well as the luxury firm pillowtop. However, I do know that these pillowtops are going to be more trouble than their initial comfort is worth in the long run. 
So my question is, what would be your suggestion for the ideal setup of mattresses in the Beautyrest Black line an accompanying latex topper. 
Which type and thickness latex is best to mimic the initial comfort felt from the luxury firm pillowtop?

Just for background, my wife and I are about a combined 400 lbs, and I'm certainly responsible for the bulk of that weight. 
We're both middle-aged and lucky to be relatively free of any back or other concerns that might impact a firmness/comfort choice. 
She's a bit of a side, back and stomach sleeper, while I'm generally a back sleeper with the occasional turn to the side.

Start with the Simmons Beautyrest Black Desiree mattress in the luxury firm.
You'll add an EverEden 2" soft Talalay latex topper to that.
My wife and I, who's total weight is more than yours, home tested this sleep system.
